The ABC Certificate for Pastry cooks and Patissiers is an ideal starting point for those who enjoy bakery and wish to develop their skills and knowledge to a high standard.
All lecturers in the catering division have first class industrial experience and the college enjoys a good reputation both locally and nationally.
Course contentThe qualification aims to introduce the candidate to the basic principles, skills and techniques required by pastry cooks and patissiers. It also provides the candidate with the working knowledge and skils required to produce basic items and dishes relevant to the pastry section of a kitchen. The course will cover different units including hot sweets, cold sweets, fermented goods, pastes, confectionery items and theory to support these.
AdditionalitySuitable catering clothing is required. Students will be expected to provide their own materials or purchase them from the college every week. Also students need to have use of a camera to take photographs of their finished products.
When will I receive my results?
Results will be forwarded on as soon as they are received at the college. Please note that certificates, where awarded, can take up to 4 months to be received at the college before forwarding on to learners.
AssessmentContinuous internal assessment of portfolio work throughout the course.
External assessment: Candidates will sit an examination paper of two hours, containing 20 multiple choice and 20 short answer questions.
Additional fee informationStudents enrolling on a part time course, are subject to a one-off registration fee administration charge of £10.00 per academic year.
