Know your responsibilities under the food safety law. Understand what bacteria are and how they poison food. Recognise the symptoms caused by the main food poisoning bacteria. Know how to prevent cross contamination. Follow good working practices when accepting deliveries, storing food, cooking and serving food, and cleaning. Answer questions under examination conditions to the standard required. Suitable for: Anyone who handles food as part of their job or works in a food production environment.

Anyone who handles food as part of their job or works in a food production environment.
Programme content:
- Introduction to Food Hygiene
- Food Poisoning and Microbiology
- Prevention of Contamination and Food Poisoning
- Design of Food Premises
- Safe Food Preparation
- Cleaning and Disinfection
- Personal Hygiene
- Pest control
- Food Safety Legislation
Programme style
Throughout the day, delegates will be asked to take part in exercises, either in groups or individually.
They will also be asked to complete an examination paper at the end of the course. This is a 30 question multiple choice paper set by the CIEH. The pass mark is 20 or more.
Further development:
Delegates may wish to progress onto the CIEH Intermediate Certificate in Food Hygiene.

- The course can be delivered as one full day, or as two half days.
- Dates can be arranged to suit the individual company requirements.
- Group size: 5-15 delegates
- Training can take place at an organisation's own site or any location with training facilities.
