What is the course about?
This course is intended for students with an interest in Italian Cookery who wish to prepare and cook a selection of typical Italian dishes. It is not necessary to have attended the Taste of Italy course for beginners.
What are the course outcomes?
The participant will gain knowledge about:
How and where to purchase good food and to appreciate the quality of ingredients. A range of authentic dishes including antipasti, main course, desserts and bakes.
The nutritional value of many of the foods used.
Participants will learn the use of:
Italian foods in a variety of dishes-including pasta, cheese, oil, fresh herbs, fruit and vegetables.
A variety of kitchen equipment including electric blender and whisks, pans, mezzaluna, graters and garlic press etc.
Good health, safety and hygiene practice.
Dishes made on this course may include:
A regional soup
Italian biscuits/cake
Lasagne and other pasta dishes
Calzone
Italian desserts
Aubergine and Parmesan layer
Italian fish dish
Bruschetta
Roasted vegetables
Pesto
Lattice tart
Zabaglione
Oranges in caramel
Fresh pasta
Salad dressing
Stuffed peppers
The list of dishes will vary according to the season, the students will be learning new dishes each term,therefore it is suitable for students who wish to join the course for each of the three terms.
Alcohol is used in some of these recipes and there is no alternative.
Are there any additional requirements?
Materials
Instructions for ingredients and equipment will be given in first lesson.
How will you be assessed?
There is no formal assessment, but a student will be awarded a certificate for this course provided he/she has attended at least 80% of the sessions.
Is there an examination fee?
No.
