About this course

You must be aged 18 or over to be eligible for this course. To study the course you must have an NVQ Level 2 qualification in Professional Cookery or Food Preparation & Cooking or equivalent. To enroll on this course on a part time basis, you must be employed as a chef in a professional kitchen in an establishment that suits the NVQ Level 3 criteria.

Introduction:
The Professional Cookery NVQ Level 3 programme is designed for students who ideally are working in an establishment within the industry and wish to enhance their skills level. It is also offered to students as a Part-Time course.

Study Mode & Location:
This one year course will be held at Preston College, Fulwood Campus, St Vincent`s Road, Preston, PR2 8UR.

Course Content:
This course consists of the following units:

  • Intermediate Food Hygiene certificate
  • Gastronomy - The art of fine dining
  • Practical Kitchen sessions to enhance your skills level and develop your knowledge of cuisine.
  • Restaurant Production sessions, where you will be cooking for our customers in Vincent's Restaurant.
  • Menu design and compilation
  • NVQ Level 3 qualification where you must complete a minimum of 16 units, below are some examples :-
  • 003 - Contribute to the control of resources.
  • 702 - Prepare fish for complex dishes.
  • 707 - Cook and finish fish for complex dishes.
  • 706 - Prepare game for complex dishes.
  • 710 - Cook and finish complex poultry dishes


Assessment:
Assessments will take place in a realistic working environment (RWE) where you will be preparing and cooking food that is served in the College restaurant (Vincent`s). During the course you will become familiar with the assessment process and eventually take control of the planning of your assessments. In order to successfully gain the Professional Diploma you will have to complete and PASS a six hour practical skills test.

Careers & Progression Opportunities:
Successful completion of this course will enhanced your professional cookery skills and therefore increase your employment opportunities. It will also allow you to progress to higher level qualifications.

How To Apply
You will need to complete a Further Education Application Form. These will be available from mid-May.
Many courses have limited places so please return your application form as soon as possible. Following acceptance of your application, the earliest you may enrol is mid-June.

Part-Time+ Course Benefits
