What will I be learning?
The main subjects taught include:
Advanced cookery methods, skills and techniques, food hygiene, health and safety, equipment, commodities, introduction to recipe and menu design, food purchasing, cost and control, introduction to staff supervision, time management and teamwork.
How will I learn?
Your practical skills will be further developed in our training kitchens and Horizons Fine Dining Restaurant. This will be supported by classroom theory involving lectures, assignment activities and computer based study. Supervisory skills will be assessed through menu development, ordering resources and supervising the kitchen (under guidance). Self management, forward planning and portfolio development are key components of the programme. Students will be provided with regular feedback on their performance in a supervisory role and on their craft and communication skills, constructive criticism will provide material for individuals to self assess and set targets for improvement.
Work experience will provide further opportunities to develop skills and gain employer feedback.
What else might I want to know?
On successful completion of this course you will achieve level 3 Diploma in Advanced Professional Cookery.
You will develop your communication skills and ability to work with others both of which will be recognised in your qualifications.
You will have a key role to play as a member of the kitchen team running the food production for our excellent training restaurant Horizons where you will be producing meals for our paying customers and learning all the skills necessary for employment in a busy industrial kitchen with an emphasis on fine dining. You will have specific responsibilities relating to tasks and other students therefore a mature approach to your programme of study and the practical activities is essential.
Enrichment activities include local industry visits, learning from guest chefs and suppliers and opportunities to take part in our competition programme.
What can I do afterwards?
On successful completion of your qualification you could progress to a Foundation Degree in Hospitality Management, Higher National Certificate or apply for chef positions in leading establishments.
