Course Description
This course is designed to provide you with the knowledge and skills necessary to succeed on the Professional Cookery NVQ Level 3 and to prepare you for entrance to university or a rewarding career in the hospitality and catering industry.
Course Structure
The course is made up of 16 units, of which 3 are mandatory
Areas covered by the course include:
- Health and food safety
- Teamwork
- Prepare and cook complex fish, meat and poultry dishes
- Prepare and cook complex vegetable dishes
- Prepare and cook complex soups
- Prepare and cook a range of hot and cold desserts
- You will also study Key Skills which include Maths and English.
Course Assessment
The course is assessed through a portfolio, which will include practical assessments, questions and answers, workbooks and evidence collected on work placement.

Course Costs
There are no course fees if you are under 19 years old on 31 August 2010. However, you may have to pay for textbooks, personal kits, uniforms, trips and personal stationery. You will be informed of these at your interview.
Course Enrichment
Activities such as trips and visits will be arranged, which are beneficial to this course and your learning. These activities are optional and additional fees will be charged to you. Details will be provided at the time of interview.
During your year at college you will have the opportunity to access various enrichment activities such as visits out into the industry, trips abroad, day trips within the UK and working on special events. You will also have the opportunity to complete a work placement within the Hospitality and Catering Industry.
Course Progression
Completion of the Professional Cookery NVQ Level 3 is acceptable for entry to HNC, HND and degree studies.

Career prospects are excellent within this expanding industry, which is continually on the lookout for skilled employees, locally, nationally and internationally
This qualification will provide opportunities to gain work in a supervisory role such as assistant manager within a wide range of areas in the Hospitality Industry. These could include working in hotels, Army, National Health Service, contract catering and event catering.
