About this course

You will need two GCSEs Grade C or above, preferably in Mathematics and English, or an NVQ 1 Multi-Skilled Hospitality or Food Preparation qualification with tutor recommendation. Potential applicants will be asked to attend an interview and possibly a skills assessment.

Diploma in Professional Cookery and Hospitality Level 1

What will I be learning?

You will work towards achieving the following qualifications:
Level 1 Diploma in Introduction to Professional Cookery and Food and Drink Service.
The main subjects taught include:
An introduction to the Hospitality and Catering industry, food preparation and cooking methods, introduction to healthier food and special diets, food safety, health and safety awareness, kitchen equipment, introduction to workplace skills, food and beverage service skills, customer care, teamworking, and communication.

How will I learn?

You will develop your practical skills in taught sessions in our state of the art training kitchens and our fine dining restaurant, Horizons. Theory lessons involving demonstrations and tutor delivery will provide the background knowledge you require. Guest chefs and speakers, industry visits plus computer based activities will all contribute to your learning. You will gain experience of working within time constraints in our busy restaurant kitchen producing and serving menu items for our customers at lunchtime and during evening dinner service. Your progress and performance is monitored continuously throughout the programme by your tutors and a portfolio of work together with externally set assignments, tests and practical assessments will evidence achievement on the course.

What else might I want to know?

On successful completion of this course you will achieve level 1 VRQ in Introduction to Professional Cookery and Level 1 certificate in Professional Food and Beverage Service.

Within our training restaurant Horizons you will be communicating and dealing with paying customers, working as part of a team and learning all the skills necessary for employment. You will have the opportunity to cook and serve on special events, and possibly obtain part time employment through one of our many contacts.

Throughout the course you will have the full support and guidance of our highly skilled and professional teaching team all of whom have a wealth of experience ranging from the armed services, cruise ships, London restaurants such as the Savoy and Le Gavroche, restaurants in America, contract catering, five star hotels and the broader licensed hospitality industry. Visits to local industry establishments will be arranged as well as hearing up to date information from guest chefs and speakers. You may have the opportunity to participate in both our internal and external competition programme.

What can I do afterwards?

On successful completion of this programme you have the opportunity to progress to the Level 2 Diploma in Professional Cookery and Food and Drink Service. Alternatively you may obtain employment and continue with your training as an apprenticeship in either food preparation and cooking or food and drink service.
