Four GCSE's grades E-G or above including English. A successful achievement at Entry Level or by diagnostic assessmennt. Mature learners will be considered based on experience and are encouraged to apply. For all students an interest in food is an important factor. Course Overview This is a one year course for students who enjoy cookery and are interested in making catering their career. The course introduces students to Health and Safety and food safety as well as giving them the opportunity to produce different dishes using a variety of different ingredients. Over the past years enthusiastic and reliable students have been given the opportunity to work at Royal Ascot. This has proved very popular and valuable experience.

Qualification gained: NVQ L1 in Food Preparation and Cooking. Essential Food Hygiene L2.Key Skills at L1

Course Content: The course covers: Health and Safety Food Hygiene Team Work Food Production. You will also learn To prepare and Cook vegetables To prepare salads and fruit dishes To prepare and cook puddings and bread. This course will also include the development of skills lewading to NVQ L2. Learners will be required to undertake a 3 week work experience which will help prepare you for work and carrying on to L2 The course has a mix of Practica and Theory, with 3 practical sessions per week where food is produced for functions and the college refectory.

Work Experience: The course provides time for up to 3 weeks work placement. A part time job working in the industry with food or people is also encouraged.

Course Assessment: This course is assessed by regular practical competence assessment and the completion of a portfolio.There is some written work attached to the course and 2 short written tests.

Progression: The course enables learners to progress to an NVQ L2 either full or a work based trainee ship which involves day release to college.

Homework: Approx 1hr per week out of class time will be required to research practical work.

Additional Costs: Learners will be required to purchase Chefs whites and a set of knives to help them complete the course . The cost is approx 40 for uniform and 30 for knives.This is available through the college from our supplier.
