Why should I study NVQ Professional Cookery (Level 2)?
Studying apprenticeship will increase your practical skills and enable you to acquire more knowledge about basic preparation and cookery methods and the Catering Industry as a whole. This practical programme provides an excellent foundation for a career in the catering industry. Working in Chapters Restaurant the College's training restaurant you will gain valuable hands-on experience.

What will be studied on the course?
Course Modules NVQ Level 2 include:

  • Maintain a safe and secure working environment
  • Food hygiene
  • Contribute to effective team work
  • Maintain food safety when storing, preparing and cooking food
  • Plus a selection from 11 optional units


When does the course start and how long does it last?
The course starts in September and lasts for 1 academic year.

What qualifications are needed to do the course?
You need a minimum of 4 GCSE's at grade D including English, and Maths or Science; or NVQ Level 1 with AoN and Communications at Level 1. Previous experience in the Catering and Hospitality industry may be accepted dependent upon individual experience. An interview with specialist staff is essential for those without formal NVQ qualifications.

How will the learner be assessed?
To gain the full qualification you must complete all fourteen units. You will be assessed by observation, questioning and products of work. The assessment takes place over a period of time and is based on the individual's competence. You will build up a portfolio of work to support your learning. You will be formally assessed during your work in the college kitchen. Underpinning knowledge is delivered in the theory lesson and is tested by a series of online testing.

How much will the course cost?
You will have access to a fully equipped training kitchen. Students will have to provide their own uniform and knives costing approx. £140. You may have to contribute to the cost of any visits arranged throughout your course.

What progression routes are available?

  • NVQ Level 3 Professional Cookery
  • Successful completion of this qualification will assist you to gain employment in your chosen area in the Hospitality, Food, Travel and Tourism, Health Care and Leisure industries
  • Students satisfactorily completing the course can readily progress to an additional NVQ 3 course, e.g. hospitality supervision
