Course programme

This course is suitable for those wishing to learn new recipes for game and also those who are only just discovering the wonders of this wild seasonal food.

The day will start with a demonstration of plucking and drawing pheasant (for those who want to cook from scratch) and also some essential game techniques. Then join in the cooking as you prepare your own ‘Pheasant and pistachio terrine’, ‘Venison casserole with caramelized quince’ and ‘Honey and Black Pepper Partridge’ and see other delicious ideas to inspire you, such as ‘Griddled Pheasant Breasts with Marsala Sauce’ and ‘Creamed Cavolo Nero’. A game lover’s delight.

The day begins with coffee and pastries, followed by a morning of hands-on cooking. At the end of the class, sit down to enjoy a lunch that you have helped to prepare, with a well earned glass of wine.
