Course Overview
A Full day of preparation and cooking a variety of lamb cuts suitable for the experienced and the novice. Enjoy demonstrations linked to hands-on experience and learn to marry various flavours and create new dishes. A demonstration of how the joints and various cuts of meat are produced from a whole carcase in the most profitable way. An understanding of producing and cooking exciting lamb dishes.

Course Structure
This is a 1 day course with attendance on Mondays, 9.00am-5.00pm in the Pegwell Building.
The course will cover practical game cookery including:
  • Hygiene
  • Health and Safety
  • Commodities (Identifying various cuts of lamb)
  • Butchery techniques
  • Cookery methods
Qualification Aims
This is an informal course and as such there are no qualification aims beyond increasing your own skill in this field.

Assessments/Examinations
This is an informal course and as such there are no assessments or examinations.

Tuition Fee:£75 (Including registration)
Chef's whites are needed or at least a full white food handlers coat and caterers white hat.
