ENTRY REQUIREMENTS:
This programme has been designed for people who want to follow a career in food & drink service. Candidates normally progress to this award by means of their organisational experience, roles and responsibilities. On successful completion of this course, learners may wish to progress to a Level 3 NVQ in Hospitality Supervision or Level 3 Customer Service.

Course Details:

Candidates must complete 8 units in total, including the four mandatory units identified below, which will enable you to:
  • Maintain a safe , hygienic and secure working environment
  • Contribute to effective teamwork
  • Give customers a positive impression of yourself and your organisation
  • Maintain food safety when storing, holding and serving food
  • Depending on the range of optional units chosen this programme can enable you to:
  • Prepare and clear areas for counter/takeaway service
  • Prepare a counter/takeaway service
  • Prepare and clear areas for table service
  • Serve food at the table
  • Provide a silver service
  • Provide a buffet/carvery service
  • Prepare and clear the bar area
  • Serve alcoholic and soft drinks
  • Prepare and serve cocktails
  • Prepare and serve wines
  • Prepare cellars and kegs
  • Clean drinks dispense lines
  • Prepare and serve dispensed and instant hot drinks
  • Prepare and serve hot drinks using specialist equipment
  • Receive, store and issue drinks stock
  • Maintain and deal with payments
Assessment:

You will be expected to work through the learning materials at your own pace. It is important to set yourself targets to make sure that you progress steadily through the award. We recognise that you will have a lot of experience and the programme will help you reflect on your own practice. Your assessor will support you by checking your progress with the learning materials and assessing your practice in the workplace. You will have a portfolio of evidence which includes records of your observations, activities and supporting materials.
