NVQ 1 & 2 in Food & Drink Service


Course content:

NVQ Level 1 Food and Drink Service can be gained either in parts (units), one at a time, or all together as on a typical course of study.
The time taken to do one part, or whole qualification, will depend upon the individual. If you are keen and confident and want to learn quickly, then you can. If you learn more slowly, then you can take longer to gain the qualification. You will be given every assistance to gain the knowledge and skills you need to achieve your aim, but it is your responsibility to decide when you feel ready to be assessed.
Working at Level 1 you would need to show competence in a range of varied work activities, most of which may be routine and predictable.
You will be able to achieve this qualification at the college in the Clipper Suite restaurant, either on day release from work or on a full-time basis.
This qualification consists of a minimum of 6 units.

Level 1

There are 4 mandatory units:
501 Maintain a safe hygienic and secure working environment
503 Maintain customer care
504 Contribute to effective teamwork
604 Maintain food safety when storing, holding and serving
food
And a minimum of

2 optional Units from the following:
502 Maintain & deal with payments
513 Prepare and clear areas for drinks service
507 Prepare and clear areas for table/tray service
508 Provide a table tray service
514 Serve drinks
505 Clean & store crockery & cutlery

Level 2
Mandatory units
501 Maintain a safe, hygienic and secure working environment
504 Contribute to effective teamwork
601 Give customers a positive impression of yourself and your organisation
604 Maintain food safety when storing, holding and serving food

Plus a minimum of four units from the following

502 Maintain and deal with payments
606 Prepare and clear areas for table service
607 Serve food at the table
611 Prepare and clear the bar area
612 Serve alcoholic and soft drinks
614 Prepare and serve wine

Assessment procedure:
Assessment measures a candidate's competent practical performance. In other words we assess whether you really can do the jobs required and if you understand how and why these jobs are done.
This will normally be observation in a situation which resembles, as closely as possible, the real work place.
A person must possess relevant underpinning knowledge in order to successfully achieve a unit and prove total competence. This will be assessed by written and oral questioning.

Progression opportunities:
NVQ Level 2 Food and Drink Service or employment at operative level.
