Entry Requirements
Level 1 in related area or 3 GCSE at D (English and maths desirable).

Course Duration
One year – Full time.

Skills and Benefits
This course is a combination of practical assessment and preparation of food and beverage service disciplines.

Mandatory Units
Knife safety Prepare and cook fish, meat and poultry and vegetable dishes Maintain safe, hygienic and secure working environment Give customers a positive impression of yourself/organisation Work as part of a team Maintain food safety, store, hold and serve food Prepare clear counter/takeaway and clear areas table service Serve food at the table Provide a silver service Prepare and clear bar area Serve alcohol and soft drinks, prepare and serve wines Prepare/serve dispensed and instant hot drinks Maintain and deal with payments

Optional Units
Prepare and cook sauces and soups Basic rice, pulse and grain dishes

Course Assessment
You will be assessed through practical assessments and end of unit tests.

Progression
A career within the Hospitality and Catering industry, Level 2 Professional Cookery, Supervisory or Leadership in Hospitality Services.
