Assessment method You will be assessed in our realistic working environment, Open Kitchen Bar & Restaurant. You will also be expected to complete a training portfolio. You will be assessed at regular intervals on the skills and techniques you develop by a qualified assessor. Additionally you will sit a written Functional Skills maths exam.
