2. Course description On this course, you will learn how to work in specialist kitchen areas as a chef de partie (game, fish, shellfish and poultry), and also act as head chef in the running of our commercial fine dining restaurant. You will learn how to plan themed events, and optimise advanced knife skills in the kitchen. The programme contains internal and external competitions and also includes a two-AP1s-a-week work placement (lasting for 30 weeks) in a high-end fine dining restaurant. We have a track record of over 90 per cent of students, completing Level 3, gaining a job within their placement restaurant.
