About this course
Candidates must hold a Part II Ships' Cooks' Certificate of Competency and have an additional two years of sea service in a capacity higher than that of assistant cook.

Course content:
This course is intended to provide experienced candidates with Advanced skills and knowledge in complex cookery and bakery production for use on board ships.
Candidates will demonstrate the making of:-
- Complex bread and doughs e.g. Brioche, Danish Pastries
- Complex hot and cold desserts.
Balanced menu planning, preparation and presentation is an essential part of the course which incorporates:
- Complex meat, poultry and fish dishes using a wide variety of cooking methods.
- Complex vegetable and salad dishes including hot and cold hors d†eouvres.
Theory will be related to the practical work.
Assessment procedure:
There are three compulsory examinations:
1. Cookery practical
2. Baking practical
3. Theory paper
Free study and financial support:
Most full-time students do not have to pay for their course. We may also be able to help you with some of the extra costs associated with college, eg travel, childcare, equipment, books etc. In addition, if you have just left school, you may be eligible for an Educational Maintenance Allowance.
