Course Content: This course consists of the Principles of Working in Food Manufacture and Workplace Food Safety. Candidates can work at three levels: Award, Certificate and Diploma level, to achieve the Diploma, all of the following units must be achieved:

A mandatory unit

· Principles of working in Food Manufacture and Workplace Food Safety

Which is assessed by a multiple choice on-line examination.

Additional units

· Produce fermented dough products in food manufacture, inclusive of the following - calculate how to obtain correct dough temperatures in dough fermentation and produce three types of fermented dough products in food manufacture

· Produce and Deposit Flour Confectionery Batters and Mixes in Manufacture inclusive of the following - prepare weigh and mix ingredients.

Both of the units are assessed by a short answer examination and a practical assessment in college.

Special Features: You will have the opportunity to develop your craft skills to a very high level, while at the same time gaining the necessary underpinning knowledge.

Learners will also be encouraged to participate in competitions and external awards.

Progression: You will be able to progress to higher education or employment.
