2. Course description Learn about and make various sugar free recipes. Finding alternatives for cooking without sugar is aimed at developing a healthier lifestyle. This course will introduce you to cooking a variety of dishes using natural alternatives to refined sugar. You will be given an overview of the alternatives available and where to purchase them as well as having a better understanding of the long term health benefits.

Equipment required • Raw honey (Health food shops) • 4 chicken breasts • Rice bran oil • 1 bulb garlic • 2 mandarins/small or oranges • 2 red chillies • 1 large leek • 2 spring onions • Bunch fresh coriander • 1 packet dried udon noodle (or similar) • Soy sauce • Chinese cooking wine/dry sherry (80ml) • Chinese 5 spice powder • 1 thumb sized piece fresh ginger • Apron, washing up sponge, tea towel • A dish/container to carry it home in. • 5 plums, bottle lemon juice, cinnamon stick, 2 sprigs rosemary. • Stevia granules (available in all large supermarkets ) • Tub fat free Greek yogurt 5. Assessment method • Following Tutor demonstrations and instructions. • Safe cooking methods and food preparation • Using equipment safely and following hygiene practices expected for a food handler.
