What is the course about?
A clear and simple course designed to offer to a student, an insight into Italian cookery region by region.
What are the course outcomes?
The Participant will have gained knowledge about:
Basic methods of peeling, chopping, boiling, etc.
A variety of easy to prepare Italian dishes, including meat, fish, vegetarian and desserts.
Buying, preparing, flavouring and cooking food the Italian way.
Participants will learn the use of different knives, peelers, whisks etc.
How to saute, sweat and prepare a soffrito. How to plan a menu and lay a table correctly for an Italian meal, how to purchase good food and appreciate the quality of ingredients, how to use some convenience foods when preparing a home-made dish, how to decorate and serve food practically and tastefully, how to prepare dishes quickly, uses of some pastas, produce interesting antipasti and how to cook rice correctly. Good health, safety and hygiene practice.

How will you be assessed?
There is no formal assessment, but a student will be awarded a certificate for this course provided he/she has attended at least 80% of the sessions.
