Course content includes: terminology; supervisory responsibilities; legislation; food safety hazards; bacteriology; temperature control; design; waste disposal; cleaning; pest control; personal hygiene; staff training; food safety management systems and tools; food storage; how to implement food safety management procedures; and the role of the supervisor in food safety management procedures within the workplace.

You are assessed by an multiple – choice examination. This is a four-day course with a exam on the final day.
