The Course
This mainly practical course is designed to give you the opportunity to learn to work in an industrial kitchen using various preparation and cooking methods.

Course Content
You will also develop food and drink service skills in a coffee shop open for the sale of light meals, snacks and beverages. You will get practical customer care experience and learn cashiering skills. This course includes organised visits to hotels, hospitals and restaurants to observe the industry at work. In previous years, students have been offered the chance to travel abroad to enhance their understanding of continental cuisine and a diverse range of hospitality experiences, as well as competing in regional cooking competitions for the industry.

Assessment/Exams
Students will produce a portfolio of evidence containing underpinning knowledge and records of practical assessments in both the kitchen and restaurant. They will also complete an industrial placement in the catering industry.

Progression/Career Path
You will normally move on to the Level 2 Professional Cookery, including Food and Beverage Service, full time courses. If you would like to gain more industry experience we can take you on as a programme-led Apprentice during which, in addition to completing the full time course, you will work in industry for 16 hours a week. Having obtained this qualification, and subject to interview, you could also progress on to the BTEC National Diploma or be employed within the industry and return as a part time student.
