Food and Drink Service NVQ Level 2
Overview
Level 2 Food and Drink Service NVQ has been developed from the National Occupational Standards produced by People 1st, the Sector Skills Council for the hospitality, leisure travel and tourism industries and is designed for people who are involved in the service of food and drink as their primary work activity and wish to receive recognition for their Food and Drink Service experience.
Outline Programme
The course covers the following syllabus:
There are three routes within this NVQ:
- Route A: Food and Drink Service (Food Service Only)
- Route B: Food and Drink Service (Drink Service Only)
- Route C: Food and Drink Service
To achieve this NVQ you must complete 8 units in total:
3 mandatory units
- 5 optional units from route A, one of which must be Unit 90 or
- 5 optional units from route B, or
- 5 optional units from route C, one of which must be Unit 90
MANDATORY UNITS:
All candidates must complete the following three units:
- UNIT 22 (1GEN1) Maintain a safe, hygienic and secure working environment
- UNIT 25 (1GEN 4) Contribute to effective teamwork (cfa)
- UNIT 87 (2GEN1) Give customers a positive impression of yourself and your organisation (ICS)
OPTIONAL ROUTE A: FOOD SERVICE:
The candidate must complete five of the following units, one of which must be Unit 90:
- UNIT 82 (2FS1) Prepare and clear areas for table service
- UNIT 83 (2FS2) Serve food at the table
- UNIT 84 (2FS3) Provide a silver service
- UNIT 85 (2FS4) Provide a buffet/carvery service
- UNIT 18 (1FS3) Prepare and clear areas for counter/take-away service
- UNIT 19 (1FS4) Provide a counter/take-away service
- UNIT 23 (1GEN2) Maintain and deal with payments
- UNIT 90 (2GEN4) Maintain food safety when storing, holding and serving food
OPTIONAL ROUTE B: DRINK SERVICE:
The candidate must complete five of the following units:
- UNIT 42 (2DS1) Prepare and clear the bar area
- UNIT 43 (2DS2) Serve alcoholic and soft drinks
- UNIT 44 (2DS4) Prepare and serve wines
- UNIT 45 (2DS5) Maintain cellars and kegs
- UNIT 47 (2DS6) Clean drinks dispense lines
- UNIT 48 (2DS7) Prepare and service dispensed and instant hot drinks
OPTIONAL ROUTE B: DRINK SERVICE:
- UNIT 49 (2DS8) Prepare and serve hot drinks using specialist equipment
- UNIT 50 (2DS9) Receive, store and issue drinks stock
- UNIT 23 (1GEN2) Maintain and deal with payments

Qualification and Examination Information
Designed for: Those working in a food and drink service environment involving customer contact
Course duration: Assessment time can vary depending on the learners previous experience and their job role
Assessment method: Assessments are carried out in the workplace against nationally recognised criteria.
At the end of each unit the learner is expected to pass a knowledge test under exam conditions.
