Description of course:
This course is designed to extend your existing catering skills in preparing complex savoury and sweet dishes as well as the ability to work under pressure. Students will be introduced to kitchen management of health and safety and hygiene as well as supervisory skills.

Method of assessment:
Practical skills will be assessed in our production kitchen. Additional theoretical assessment using specially designed computer programmes.

Progression opportunities and careers:
Head Chef in a small establishment or second chef positions in larger establishments.

Entry requirements:
Level 2 in Professional cookery food or industrial experience

Specific entry requirements:
Industrial experience and a level 1 qualification in English

Additional qualifications studied:
All full time students will undertake a combination of additional qualifications that will enhance their study skills and those skills that will be important in employment.
