Course Description
This is a one year course aimed at those students who want to gain a more advanced professional cookery certificate, which will reflect their practical skills, subject knowledge and ability to work at highest industry standard.

As well as developing further craft skills, students will take on kitchen supervisory responsibilities in the areas of food safety, menu development and kitchen supervision of level 1 and 2 students.

You will have a genuine interest in food, be self motivated, totally reliable and be committed to achieving.

Course Length and Study Pattern
1 year. Students will typically spend 1 day a week in college plus some flexible hours.

Career Progression
It is expected that successful candidates will be able to take up a junior supervisory role in some of a number of establishments including: Hotels, Restaurants, Contract Catering, transport Catering,Pub Restaurants, Sports Clubs.

Work Experience
Alongside the course you will be expected to gain part-time work experience in an appropriate establishment relevant to the course. There will also be an opportunity to compete a minimum of 4 weeks work experience during the course.

Practical assessment for each unit

Underpinning knowledge test for each unit

Students will build up a portfolio over the duration of the programme.

Trips and Enrichment Activities
There will be a number of industry visits planned throughout the year. You will have the opportunity to meet with chefs from industry and visit a wide range of establishments and trade exhibitions
