About this course

Standard entry to this course requires one reference. It is desirable that you can demonstrate 90% attendance. GCSEs in both English and maths at grade 3 (D) or above is required.

Consideration will be given to all applicants over the age of 19 who do not hold formal English and maths qualifications.

Students with relevant industry experience will be considered, as will those who hold a level 1 qualification in professional cookery.

Course programme

Year 1

On this course you will be serving freshly-produced “fine dining” cuisine accompanied by fine wines in our award-winning taste restaurant. You will develop your knowledge and understanding of the hospitality industry through practical and theoretical sessions. You will develop your food and beverage service techniques and product knowledge whilst gaining the knowledge and understanding of current legislation within a licensed restaurant.
To be successful in the hospitality industry you need to work as part of a highly professional team. To this end, we will help you develop your team-building skills. You will become the face of Leicester College’s hospitality department as you will be involved in many of Leicestershire’s prestigious events throughout the forthcoming year through Leicester College and at outside events.
As part of your study programme you will undertake a work placement in a restaurant environment of your choice. This will give you the opportunity to implement the skills you have learnt.

Additional information

You will undertake a formal exam which will include: an introduction to the hospitality industry; principles of customer care; menu knowledge; food service; beverage product knowledge; food safety; and health and safety. Your practical skills will be assessed with a three-part synoptic test. Part one will take the form of a planning session; part two will be a practical assessment; and part three will summarise your overall assessment performance. Assessments will be externally marked by the awarding body.
