Course programme

You will complete 12 mandatory units from a range which includes: -Supervising food safety for catering -Gastronomy and food culture -Sourcing produce for the professional kitchen -Advanced skills and techniques in producing vegetable and vegetarian dishes -Advanced skills and techniques in producing fish and shellfish dishes -Advanced skills and techniques in producing desserts, petits fours and decorative products. You will also be asked to complete a number of optional units that can be undertaken to complete the qualification. The units you choose to complete will depend on your specific job role which will be identified with a skill scan. This will allow you to tailor the qualification to your specific needs. Assessments are carried out in the workplace on a pre-arranged day and time with your competence for each unit being assessed during your normal work role, and over a period of time. Your knowledge will be covered by multiple choice question sheets.Work based evidence will be required in the form of witness statements, personal statements and work products. Observation and questioning will also be used to assess your competence in your job.
