Gourmet food is a taste of edible luxury, originally centered around the idea of high quality and rare ingredients along with the methods of preparation. Although gourmet is most typically associated with rich foods some can make a crossover into everyday cooking adding a touch of gourmet into your home.

This stimulating cookery course is intended to develop culinary flair, provide you with a compilation of recipes and above all provide good fun.

The course allows for the adventurous to experiment in creating foods using exceptional spices and herbs as well as other rich ingredients that will result in producing delicious dishes. Using fresh local produce will provide you with a strong foundation on which to build your culinary innovation.

Course programme

This programme will allow you to explore various ingredients and develop the basic craft culinary skills.

The course will encourage you to develop creative gourmet ideas and show you the art of presenting food to impress. Not only will the programme provide you with some new skills in culinary techniques but will also present you with a small compendium of recipes that you are bound to enjoy at home for your own indulgence or for a more special occasion.

Delivered on an integrated basis to give you a greater interest the course will explore the tools required for specific culinary tasks, the selection of ingredients and the methods required in the preparation, cooking and finishing of those ingredients to form a tasty selection of gourmet dishes which may include:

  • Pan fried lamb cutlets on champ mash served with a balsamic reduction.
  • Medallions of salmon with lime butter sauce with wild braised rice and fennel
  • Chocolate marquis with a vanilla cream and candidate orange / Raspberry Souffle
  • Pan-fried medallion of salmon served on a risotto cake with a rich tomato fondue served with a watercress salad.

On the course you are likely to develop awareness of health and safety aspects in relation to the preparation of food, food and safety awareness, practical knife skills, stove control and will learn logical and coherent methods of work whilst producing sound and interesting food.
