CIEH Level 2 Award in Food Safety in Catering Certified By: Chartered Institute of Environmental Health

Fundamental food hygiene knowledge for all food handlers. This course is designed to be practical and covers relevant legislation, food safety hazards, temperature control, refrigeration, chilling and cold holding, cooking, hot holding and reheating, food handling, principles of safe food storage, cleaning and food premises and equipment. A multiple choice tick box examination is completed at the end of this course
Aims -
To enable participants to:
  • Recognise symptoms of food poisoning
  • Characteristics of bacteria
  • Prevention of contamination and food poisoning
  • Personal hygiene
  • Recognise the need for equipment and pest control hygiene
  • Methods of achieving high standards of cleanliness in food premises
  • Understand the requirements of Food Safety Act 1990 & Food Safety Regulations 1995
This course is tested via a multiple choice tick box examination, which is sent to the Chartered Institute of Environmental Health for marking. Certificates are returned to successful candidates usually within 15/20 working days.
