Course Aims:
This is a one year course specifially designed for students who want to specialise in kitchen, larder and pastry work. It provides an excellent grounding to progress onto kitchen management.
Course Content:
You will study:
Food production - providing an input to menus and food preparation
Theory to develop your food preparation and supervisory skills
Food Safety
Develop the ability to run the kitchen as well as running a section
Guiding a team of level 1 and 2 students, delegating tasks and monitoring service.
Progression:
You may wish to progress into Higher Education or go straight into industry.
Awarding Body:
City and Guilds (HAB)
Exam:
You will be continually assessed throughout the course, through practical and product work. You will be required to complete a portfolio of evidence that you have collected throughout the year.
