Beyond that, all we ask is that you have a passion for hospitality and a desire to learn all about cooking and catering. Assessment method You'll be learning in real working kitchens as a part of this certificate, and so a large part of your assessment will be done throughout the course in the form of practical work. You may spend some time learning in the classroom too, and another part of the assessment will involve completing some portfolio tasks.
