Course Overview This is aimed at trainee chefs who wish to gain a professional qualification in Catering. The course can be taken as part of the Apprenticeship scheme.
Qualification gained: NVQ level 2 in Food Preparation and Cooking, Food Hygiene Certificate, Health & Safety in the Workplace Certificate, Key Skills in Application of Number and Communications.
Course Content: This is a practical programme which develops skills in preparation and cookery of various foods. The course includes five mandatory and seven optional units. Mandatory Units: Maintain Hygiene in Food Storage, Clean Food Production Area, Create and Maintain Effective Working Relationships, Maintain a Safe and Secure Environment. Optional Units: Prepare and Cook Cakes, Sponges and Scones, Prepare and Cook Meat, Prepare and Cook Pasta, Prepare and Cook Soup, Prepare and Cook Vegetables, Prepare Hot and Cold Sauces.
Work Experience: Students must be employed in the Catering industry, and involved with food preparation and cooking.
Course Assessment: Practical assessment is carried out both at College and in the workplace. Knowledge is assessed by on-line tests.
Progression: Food Preparation & Cooking NVQ Level 3
Homework: Approximately two hours per week
Additional Costs: Students will be required to purchase Chef's whites and a set of catering knives.

- Part Time Course Fee Relate to Year 1 course fees only. Two year course fees will have an additional course fee for the second year; these fees are subject to confirmation annually.
