Professional Cookery NVQ 2

Is this course right for me?

This 34 week part-time course will provide you with the opportunity to develop the practical skills and knowledge required for NVQ Level 2 in Professional Cookery.

What will I be learning?

This NVQ2 is made up of 14 units including: Health and Safety, Food Hygiene, working with others and practical cookery skills including the preparation and cookery of meat dishes, poultry, vegetables, soup, sauce, fish, pastry, dough & pasta. Throughout the programme health and safety, hygiene, teamwork and the importance of a clean environment are addressed.

How will I learn?

You will be continually assessed throughout the course by way of direct observation, oral questions, witness testimony and questions undertaken under test conditions for each unit. Teaching sessions will consist of theory delivery, practical demonstrations and learner participation in practical activity. You will be provided with a Unit Record (logbook). You will also have the opportunity to access learning materials on line using the college's intranet system, both in College and from home.

What else might I want to know?

You will benefit from the skills development sessions run by our highly experienced tutors with up-to-date industry experience and knowledge. All practical activities take place in our modern, industrial standard kitchens, fully equipped with the latest large scale equipment. You will be required to provide a uniform to be worn in all practical classes and a 'basic' set of knives contained in a wallet. You will also be advised on appropriate text books. This course is aimed primarily for individuals already working in the catering industry, who wish to further develop their skills and gain a nationally recognised qualification. Skills development will take place in our modern, highly equipped training kitchens where you will handle a variety of commodities and produce items using a range of cooking techniques.
