The course will be delivered over 3 ½ hours inclusive of written question and answers in the Question of Food Hygiene - Refresher A4 booklet. Each learners pack will also include a Food Hygiene A5 Handbook which will be of great assistance in group work exercises.

Course programme

The REHIS Level 2 Elementary Food Hygiene Refresher course is a food hygiene qualification that is essential for the catering professional within the food industry. All individuals who have completed the Elementary Food Hygiene course and are due to renew their qualification are eligible to apply for the half day refresher.


This course is in place to update compliance enabling companies and organisations to comply with current EU Regulations on the Hygiene of Foodstuffs and the new Food Hygiene (Scotland) Regulations 2006.

Sectors that would benefit from attendance on this course include; the manufacturing and processing of foodstuffs, Hotels and Guest Houses, Restaurants and Cafes, Clubs, Delivered Catering and Meals on Wheels, Food on the Move, (Trains, Coaches, Boats and Aeroplanes), Takeaway and Fast Food Restaurants and Public Houses.

The course will cover all areas of food hygiene, including HACCP in relation to the critical control points in the working environment.
