2. Course description This advanced programme of work is specifically designed for those people who have achieved a Level 2 in Professional Cookery or have attained an equivalent qualification and wish to continue their development of the knowledge and skills. Candidates must complete 16 Units to achieve a full certificate units covered will include: establish and develop positive working relationships in hospitality maintain the health safety and security of the working environment maintain food safety when storing preparing and cooking food prepare cook and finish a range of complex dishes using fish meat poultry and vegetables prepare cook and finish complex dressings and hot and cold sauces.

3. Entry requirements A minimum of an NVQ Level 2 within Food Prep and Cooking or any other related Level 2 Professional Cooking Qualification. You will also be required to attend an informal interview. 4. Equipment required No equipment required 5. Assessment method Candidates will have the opportunity of working in the Restaurant undertaking a Skills/Larder Session and demonstrate their knowledge in a Theory Class. Assessments will take place in an RWE (Realistic Working Environment).
