Some skills you may learn include: Boning and trimming meat; Cutting poultry into supremes and ballotines; Making stuffing and forcemeat; Tying meat; Chining meat; Appropriate methods of cookery for those cheaper cuts.

Who is the programme for? Do you want to have fun and learn how to cook, but are not looking to gain a qualification? If the answer to the above question is yes, then this may be for you.

How is it assessed? There is no assessment, no qualification and no worry.
Future prospects? Those students who have enjoyed their six weeks with us and are feeling a little more adventurous, may opt for one of our other menu of short full cost courses.
When will the programme start? Enrolling 5th November. Course runs from 12th November to 10th December.
How long will it take? Thursday 6.00pm -9.00pm for 5 weeks.
