The course covers:

  • Prepare & cook complex fish dishes.
  • Prepare & cook complex meat dishes.

  • Prepare, cook & finish complex hot sauces.
  • Prepare, cook & finish complex soups.
  • Prepare, cook & finish complex cold desserts.

As part of your course, you may be required to study towards functional skills in Maths & English at an appropriate level.


Method of Study

This is a complex practical course, based around activities in kitchen craft sessions, which are supported by tutor led theory sessions and self-study.

You will be assessed continually throughout the course by your tutor. Practical workshop observations, written and oral questions and assignment work.
