The NVQ Level 3 Professional Cookery course offers you a natural progression route from the current Level 2 programme. You will develop existing culinary skills to a higher level and be introduced to new and more advanced food preparation and cooking techniques.
The course will run over one day and one evening producing food for the public in our Jubilee Restaurant, where you will, on occasions, act as head chef or sous chef, supervising the production of your own menu.
You will study both the theory and the practical elements of professional cookery and will assessed through observation of you working in the practical environment, in written or computer based tests.
The current working days are Wednesday daytime and Thursday evening.

About this course
As well as having a keen interest in catering and food you will also hold a Level 2 qualification in Food Preparation, Catering or a related subject. Experience of working in the Catering industry is also desirable.

Course programme
Progression may be possible to a cookery related level 4 course or a hospitality management programme.
You could also progress into the catering industry working as, at least, a junior CDP.
Course Assessment Method
Students are assessed by observation of students who demonstrate competence over a 16 unit programme, a completed portfolio of evidence and completion of all the theory on line test for the practical units completed.
Areas of study will include reduction sauces, terrines, advanced butchery techniques and fine desserts.
