This stimulating cookery course is intended to develop culinary flair and allow you to conjure up a compilation of fine Mediterranean recipes that will transport you back to warmer climates and pleasant holiday memories. You will develop a mix of Mediterranean cuisine full of rich flavoured influences from Spain, France, Morocco, Greece and neighbouring countries.
The course allows for the adventurous to experiment in creating exciting dishes that are full of flavour combinations using exceptional ingredients that will result in fantastic, mouth-watering dishes. Using fresh local produce will provide a strong foundation on which to build culinary innovation using key ingredients such as fresh fish and olive oil. Not only will you develop a tasting for the Mediterranean but there are also a multitude of health benefits to eating these dishes.

Course programme
This course will allow you to explore various ingredients and develop the basic craft skills in Mediterranean cookery and encourage you to develop your own creative culinary ideas whilst using quality ingredients.
You will be presented with a range of recipes for both starters main courses and sweets, some of these dishes may include:
- Pitta breads, tzatziki, roasted tomato and feta salad
- Baked Seabass stuffed with fennel, with pancetta pea and mint, sprouting broccoli with hazelnuts and anchovies & spicy aioli
- Rack of lamb with tomato and basil sauce, spiced beans and Mediterranean baked sweet potatoes
- Sabih with tahini sauce and Mediterranean chopped salad
You will also learn culinary tips in making food a fun and enjoyable past time. Delivered on an integrated basis to give you a greater interest. The course will explore the tools required for specific culinary tasks, the selection of ingredients and the methods required in the preparation, cooking and finishing of those ingredients to form a full range of dishes.
You are likely to develop awareness of health and safety aspects in relation to the preparation of food, food and safety awareness, practical knife skills, stove control and will learn logical and coherent methods of work in producing interesting unique Mediterranean food.
The selection of foods used to produce these fantastic dishes will vary from those that are used on a daily basis to those that are described as specialist products. Meat, fish, vegetables, sauces, fruit, nuts and pulses are likely to find their way into the dishes that you will have fun creating.
