Course Overview
This course is designed for Chefs, Cooks and Caterers working in the Hotel and Catering Industry who require a recognised qualification.
Course Structure
This is usually a two-year course with attendance on Tuesdays, 9.00am 5.00pm in the Pegwell Building. Initially students should meet in the Pegwell reception.
The course will cover practical cookery and the theory to underpin the practice including:
- Hygiene
- Health and safety
- Commodities
- Cookery methods
Qualification Aims
The aim of the course is to provide those in the catering industry a way of obtaining a recognised qualification to supplement their work-based learning.
Assessments/Examinations
The course is modular and continuous assessment by the course tutor is put in place.
