Course ContentCourses are aimed at those who want to pursue a career in professional cookery or in the hospitality industry. Culinary skills will be developed either in our commercial Bistro, licensed restaurant or workshops alongside theory assignments which will give a broad understanding of the industry.
Topics on this course include:
Developing culinary skills to produce: vegetable and vegetarian dishes, meat, poultry and game, fish and shellfish, patisserie and fermented products, desserts, petit fours and decorative products
Menu planning
Work experience in hotels such as The Villa (Wrea Green), Harvey Nichols and The Bridgewater Hall.
