Course Content

Courses are aimed at those who want to pursue a career in professional cookery or in the hospitality industry. Culinary skills will be developed either in our commercial Bistro, licensed restaurant or workshops alongside theory assignments which will give a broad understanding of the industry.

Topics on this course include:

• Developing culinary skills to produce: vegetable and vegetarian dishes, meat, poultry and game, fish and shellfish, patisserie and fermented products, desserts, petit fours and decorative products
• Menu planning
• Work experience in hotels such as The Villa (Wrea Green), Harvey Nichols and The Bridgewater Hall.
