Course Aims:
To support the development of both personal and practical learner skills and knowledge in a vocational area providing the opportunity to move into further learning and training.
Course Content:
The course is made up of a number of individual units.
Three units are linked to personal and social development and are:
*Undertaking an Enterprise project- Includes all aspects from planning and advertidsing to selling a product.
*Healthy Lifestyles- including diet and fitness
*Developing Personal Confidence and Self Awareness- Including strengths, weaknesses and setting personal goals
The vocational units include a variety of practical skills to introduce and develop skills in both Professional Cookery and Food and Beverage Service.They may include but are not limited to :
Food preparation and Cooking (Hot and cold foods) in our production and pastry kitchens and the Bistro restaurant.
Individual practice - practical food preparation sessions with practical demonstrations from chef lecturers
Silver Service waiting on in Clouds restaurant
Dealing with customers
Bar Service
Theory based sessions and portfolio building.
Functional skills in Maths, English and ICT are also included at the appropriate individual level.
Progression:
Professional Cookery Level 2, Food and Drink Service Level 2 or an alternative qualification suitable for the individuals positive achievement.

Exam:
Each unit is assessed by a combination of externally set assignments and online multiple choice tests. Craft units are assessed by a series of practical assessments.
Qualification:
Level 1 Diploma in Introduction to Professional Cookery and Level 1 Certificate in Food and Beverage Service.

Professional Appearance:
Appearance is of vital importance to promote high standards of professionalism and heath and safety . You will be required to purchase a Chefs uniform including safety shoes and wear the appropriate uniform front of house. Full details of kit and uniform costs will be explained at interview.
Duration:
1 year over 3 or 4 days per week.
