Course programme

During the course you will explore various ingredients using fresh local produce to encourage you to develop your own creative culinary skills and create that perfect Christmas lunch. Some of the dishes you will learn may include:

  • Stuffed Turkey crown with homemade gravy and traditional English trimmings
  • Sugar glazed carrots with ginger, Red cabbage Flemish style and Hassle back potatoes cooked in goose fat with fresh thyme and rosemary
  • Christmas biscuits, Christmas pudding and orange snowmen pancakes
  • Turkey and vegetable pie with home- made rough puff pastry

During the course you will develop awareness of health and safety aspects in relation to the preparation of food, food and safety awareness, practical knife skills, stove control and will learn logical and coherent methods of work in producing sound and interesting food.
