Full Time VRQ in Professional Cookery and Diploma in Professional Food and Drink Service

Course Description:

Combined with C&G Level 2 Diploma in Professional Food and Beverage Service.

This programme aims to cover both practical and theory subjects in cookery and restaurant craft skills. The qualification also covers a broad understanding of other aspects of kitchen operations.

The programme is vast and varied, but some of the subjects covered are:

  • Food preparation
  • Health and Safety
  • Kitchen operations, costing and menu planning
  • Table Service
  • Customer Service

The programme also includes Functional Skills at an appropriate level.

Level: 2 Course Type: Full Time Entry RequirementsEntry Requirements:

VRQ Level 1 Introduction to Professional Cookery/C&G Level 1 Certificate in Food and Beverage Service or appropriate industry background and a good reference from school or college. All students will be interviewed and will complete an entry test as well as demonstrating a sustained commitment to succeed.

Progression & AssessmentAssessment and Progression:

A mix of assessment styles aim to suit all learners, and include online testing, practical craft assessments, assignments and sort answer tests. There is an end of year cookery examination.

After successfully completing the course there are progression opportunities to the C&G Level 3 NVQ in Professional Cookery, NVQ Level 3 Hospitality Supervision and Team Leading Apprenticeships, or the BTEC Level 3 Diploma in Hospitality
