Course description An industry recognised qualification for those who are serious about the food industry, ; This Level 2 vocational course forms the second part of the Craft Catering qualification. You will learn a wide range of professional cookery and food and beverage skills, along with knife skills, patisserie and general skills. , , Participation in work placements as part of the ‘Catering for your Future' program, gives you a hands on approach and real life experiences of future career paths. Trips to London and local restaurants are also a part of this course. Guest chefs are invited in to share their knowledge with students. We have in-house student competitions to encourage creativity. College open evenings and prestigious gourmet events are an opportunity to showcase your skills. , , This is a recognised qualification for all those wishing to take up a career in the Hospitality and Catering Industry as either a chef or a career in food and beverage service, this course forms the second year of a full time program of study. Entry requirements Applicants should already have NVQ1, VRQ1 or equivalent in skill based areas (Kitchen and Restaurant) and have a desire to enter the catering industry at a higher level., , You should have a good record of achievement, have good references and have already shown a commitment for your chosen profession. At interview you will be expected show an understanding of the catering industry and a strong commitment to the course., 4. Equipment required No equipment required 5. Assessment method The assessment for the VRQs in Professional Cookery and Food & Beverage Service will be by practical test, assignment and theory tests; these will be set at regular intervals during the year.
