Advanced apprentices, with support and opportunities in the workplace, can progress onto the Higher Apprenticeship in Hospitality Management. On completion of the Advanced Apprenticeship, the apprentice will be able to work competently as a Sous Chef or Senior Chef/Cook but may, with relevant opportunities and further training, progress to a general management role in the catering industry.

Course programme

The Advanced Apprenticeship in Catering and Professional Chefs builds upon the skills and knowledge that are acquired at Level 2 and develops skills relating to the preparation and cooking of complex dishes and the supervision of others. The Apprenticeship is the main progression route for those have completed an Intermediate Apprenticeship in Catering and Professional Chefs (Professional Cookery pathway) but may also be suitable for those who have relevant experience but do not have a Level 3 professional cookery qualification. The pathway is offered is professional cookery You will achieve a Level 3 NVQ Diploma in Professional Cookery or a Level 3 NVQ Diploma in Professional Cookery (Preparation and Cooking) and a Level 3 Certificate in Hospitality and Catering Principles (Professional Cookery). Unless exempt on entry, you will also achieve Level 2 Functional Skills qualifications in English and maths.You will learn through a combination of on- and off-the-job training. You will attend college on a day release basis during term time and spend the rest of your time earning and learning in the workplace. You will be assessed on a continuous basis through a combination of knowledge and practical assessment activities, including assessment of activities in the workplace. The Apprenticeship has a minimum duration of 18 months unless you are aged 19 or older and have undertaken relevant prior learning. Your progress will be continuously monitored and supported by an Apprenticeship Achievement Officer.
